Prepare the marinade: Mix together the soy sauce, vinegar, crushed garlic, bay leaves, and peppercorns.

Marinate the chicken: Add the chicken to the marinade and let it sit for at least 30 minutes (ideally 2 hours).

Sear the chicken: Drain the chicken slightly (keep the marinade). Brown the pieces in a casserole dish with a little oil.

Add the marinade: Pour the reserved marinade over the chicken.

Simmer: Cover and cook over low heat for 30 to 35 minutes.

Reduce the sauce: Uncover and let the sauce reduce for 5 to 10 minutes until thickened.
