Yassa Chicken

A classic West African recipe, bold and tangy. This dish consists of chicken marinated in a generous amount of onions, lemon juice, and mustard, then caramelized to perfection.

Ingredients

Chicken

  • 1 Whole chicken cut into small pieces

Marinade

  • 6 White onions cut into strips
  • 4 lemon
  • 3 Dijon mustard
  • 4 minced garlic cloves
  • 1 chili pepper (optional)

Cooking

  • 100 ml Sunflower oil

Instructions

    Marinate: Mix together the onions, lemon juice, mustard, garlic, and oil. Add the chicken and marinate for at least 4 hours (ideally overnight).

    Grill: Remove the chicken from the marinade and grill or brown in a pan until golden brown. Set aside.

    Caramelize: In a heavy-bottomed saucepan, cook the onions from the marinade over medium heat until tender and lightly browned (about 20 to 30 minutes).

    Simmer: Return the chicken to the pan with the remaining marinade. Cover and simmer for 30 minutes until the sauce thickens and the onions are caramelized.

    Serve hot over jasmine white rice or broken rice.
