Ingredients

Chicken

  • 1 Whole chicken, cut up

Vegetables

  • 3 fresh tomatoes (or 200 g tomato purée)
  • 1 large onion
  • 2 carrots
  • 1 bell pepper
  • 2 garlic cloves
  • 1 small piece of ginger
  • 1 chili pepper (optional)

  • 4 Ripe plantains

  • 1 Maggi cube

  • Pepper
  • Vegetable oil

Instructions

    Clean and season the chicken with salt, pepper, garlic, ginger, and seasoning cube.

    Lightly boil the chicken in water for 10–15 minutes.

    Drain and fry the chicken pieces until golden brown. Set aside.

    Peel the plantains and cut them into rounds.

    Fry the plantains in hot oil, then set aside.

    In a saucepan, sauté the chopped onion, add the blended tomatoes, and simmer.

    Add the sliced carrots, sliced bell pepper, and chili pepper. Cook for a few minutes.

    Add the fried chicken and plantains. Stir gently and simmer for 10 minutes before serving hot.
