Chicken Souvlaki

Ingredients

Chicken

  • 1 kg boneless, skinless chicken breasts, cut into 2-3 cm cubes

Marinade

  • 60 ml extra virgin olive oil
  • 30 ml fresh lemon juice (about 1 lemon)
  • 3 cloves garlic, finely chopped
  • 2 teaspoons dried oregano
  • 1 teaspoon on
  • 1/2 teaspoon freshly ground black pepper

Equipment

  • 8-12 wooden skewers (soaked in water for 30 minutes) or metal skewers

Instructions

    In a large bowl, combine the olive oil, lemon juice, minced garlic, oregano, salt, and pepper to create the marinade.

    Add the chicken cubes to the marinade and mix well to coat all the pieces. Cover the bowl and marinate in the refrigerator for at least 30 minutes, ideally 2 to 4 hours for more flavor.

    Thread the marinated chicken pieces onto the skewers, leaving enough space between them to ensure even cooking.

    Preheat your grill (gas, charcoal, or electric grill) to medium-high heat.

    Place the chicken skewers on the hot grill. Cook for 8 to 12 minutes, turning regularly, until the chicken is golden brown and cooked through (internal temperature of 163°F).

    Remove the skewers from the grill and let them rest for a few minutes before serving. Serve immediately with tzatziki, pita bread, and Greek salad.
